Pumpkin Muffins

Mix 1 can organic pumpkin, 1 1/4 cups brown sugar (or coconut sugar), 2/3 cup avocado oil, 2 teaspoons vanilla powder, and 4 eggs in a large bowl. Add 3 cups freshly ground wheat flour, 2 teaspoons baking soda, 1 teaspoon sea salt, 1 teaspoon cinnamon, 1/2 teaspoon cloves, and 1/2 teaspoon baking powder. Combine well, and add chocolate chips if desired. Pour into greased or lined muffin tins and bake at 350 until wooden toothpick comes out clean.

The Best Pie Crust

Cut 1/2 cup cold butter into small pieces in a mixing bowl and top with a cup of flour and 1/2 teaspoon sea salt. Use pastry blender to cut until particles are the size of small peas. Add cold water very slowly just until the dough sticks together. Pat into a ball then shape into a flattened round on a floured counter. Dust with flour and roll out dough. Fold pastry into fourths to place in pie plate, then unfold and gently press into the mold. Cut excess off sides and design and fill as desired.

The Best Pumpkin Pie

In a mixing bowl whisk 2 eggs, 1/2 cup brown (or coconut) sugar, 1 can organic pumpkin, 12 ounces cream, 1 teaspoon ground cinnamon, 1/2 teaspoon sea salt, and a dash each of nutmeg, allspice, and cloves. Pour into pie crust and bake at 375 just until middle raises.

Peach Pie

Crumb one package organic graham crackers and a handful of walnuts on “pulse” in a blender. Pour the crumb mixture over 5 Tablespoons melted organic butter and press into a small pie tin. Bake at 350 5-7 minutes to set crumbs. Meanwhile with a mixer blend one 8 oz package organic cream cheese with 1/4 cup organic cream and 1/3 cup powdered sugar. Spread over the crumb mixture. Dice 2 peaches and toss them in Manuka honey and a pinch of salt and spread them on top. Refrigerate till serving. Voila!

Pumpkin Bundt Cake

Preheat oven to 350. In a bowl whisk together 4 cups freshly ground wheat flour, 4 teaspoons baking powder, 1 teaspoon baking soda, 1 tablespoon salt, 1 teaspoon ginger, 2 teaspoons cinnamon, 1 teaspoon nutmeg, 1/2 teaspoon cloves. In a separate bowl mix 1 cup softened butter, 1 cup brown sugar, 1 cup coconut sugar, 4 eggs, 1 cup buttermilk, 1 can (15 oz) organic pumpkin. Mix dry ingredients into wet and spoon into buttered and floured Bundt pan. Bake until toothpick comes out clean.

Mom's Brownies

Mix 1/2 cup unsweetened cocoa, 2 cubes organic softened butter, 1 cup brown sugar, and 2 eggs. Add vanilla powder and 1 T honey. Mix in 1 3/4 cups fresh-ground organic sprouted wheat flour, 1 t b powder, and 1 t salt. Add nuts (optional). Bake in buttered 9x13 pan at 350 degrees just until batter is raised in the middle.
