Chicken Salad

To make this amazing dish, cook and shred the chicken in large pieces. In a separate dish combine organic cream with a few splashes of red wine vinegar to thicken it. Then add VERY FINELY diced celery and red onion to the thickened cream, along with a little salt and freshly ground pepper, and toss the chicken in the dressing once cooled. The greens are simply covered in a balsamic vinaigrette, with lots of salt added. Arrange a bed of greens on the plate, top with a scoop of chicken salad, and decorate with colorful fruit. The trick is to eat bites with the greens, chicken, and fruit all together to create a celebration of flavors in your mouth!

Watermelon-Feta-Mint Salad

Have you tried watermelon salad with feta, balsamic, and mint? It’s that easy, and a great way to enjoy your last summer melons! Simply chop up a watermelon, crumble with feta cheese, garnish with fresh mint, and top with balsamic vinegar and extra virgin olive oil. If you haven’t tasted this amazing combination you should!

Caprese Salad

This is one of the easiest salads ever! It’s simply sliced tomatoes, sliced fresh mozzarella, and basil. Drizzle with olive oil and balsamic vinegar. Tip: place a piece of each in between bread sliced for an amazing sandwich!

Salad Niçoise

Tuna, olives, corn, tomato, potato, egg, and cucumber, all over a bed of greens.
Dressing: extra virgin olive oil and balsamic vinegar.
